"You're on a bit of a Mediterranean cooking vibe at the moment", commented the DH as he tucked into this dish.
I found this recipe from Emily at A Mummy Too. Okay, so I didn't have exactly the right ingredients, but they were close enough and 15 years ago when our last microwave gave up the ghost we said: "let's wait and see if we miss it before we buy another one"...
So I cooked the pasta (not the exact one Emily used, a twisty one), and the spinach (some odd chopped then frozen in balls stuff Sainsbury's say is good for quiches), on the hob and drained them. I didn't have any garlic powder, so I crushed a couple of cloves in the crusher I thought I'd thrown away then found in the gadget drawer.
I mixed all the stuff together, bunged it in the oven and nom, nom, nom, nom, nom.
This is a highly delicious and moreish dish (in fact I'll be having more for my lunch today), and it will definitely be made again in this household. I particularly like the melty stringiness of the mozzarella :-)
